Wild Wolf & Bold Rock are coming together with a special collaboration beer dinner at Wild Wolf 12/1/16. Cocktails will be available from 5:30-6:30 pm and dinner will begin at 7pm. Four courses created by Executive Chef Chris Jack and paired with Wild Wolf’s beer, as well as Bold Rock’s delicious cider, will be served. Each meal will be explained by Chef and each beverage will be described by the brew master or cider maker who created it. To end the evening Wild Wolf’s Brew Master Danny Wolf and Bold Rock’s Cider Makers Brian Shanks and Ian Niblock will present a special collaboration brew and you will be the first to sample it!
Course 1 – Twice cooked Autumn Olive Pork Belly
Va Draft glazed pork belly with celery root, baked apple, pork crackling, and candied walnuts paired with Bold Rock Va Draft.
Course 2 – Soup and Salad
Roasted Fig salad with smoked butternut squash bisque paired with Wild Wolf Whoa Nelly
Course 3 – Pasta dish
Blonde Hunny braised beef raviolo with a bleu cheese béchamel, cider poached pears, and candied walnuts paired with Bold Rock Pear Cider
Course 4 – Dessert
Wild Wolf Nelsonite Apple Pie with Bold Rock IPA ice cream paired with Bold Rock IPA Cider.
We will be providing our guests with a private sampling of Brew Ridge Trails collaboration brew “A Beer to End All Wars”. The collaboration beer is to commemorate all who fought in WWI and WWII and is to be release 12/4 at Wild Wolf’s release party. You however will be the first to try this special brew.
